
So it seems William Davis, M.D. (who wrote Wheat Belly) is right! He says “be gluten free but don’t eat gluten free”. What he means by this is by bringing gluten free foods into your every day diet, they begin to mimic wheat containing food. Causing the same symptoms you were experiencing before-to show up again! Right when you thought you had it licked right? Wrong! Oh shoot! Now what are we going to eat?

Originally when we weaned our son off of gluten he showed great progress and could eat “gluten free” foods. Like baking with other gluten free flours instead of wheat flour. For example, we make delicious desserts with our brown rice, tapioca flour, and potato starch blend- that taste just as good as the real thing! Gradually our son’s symptoms returned and in the back of my mind Dr. Davis’ words would ring in. I knew deep down my son needed to be off of gluten free foods as well, no grains. This meant no more pancakes, waffles, bread, cookies, cakes, pasta, rice milk, corn tortillas, etc. I can use other things like coconut and almond flour and eventually I probably will but for now while he gets his body back in balance, our son chooses to only eat veggies, meat, and fruit.
Let me tell you! It is really hard for a 10 year old to wean himself off of the grain containing comfort foods. I knew it was going to be hard at first, with a lot of complaining (sooo was not looking forward to that!) but it was short lived and we sat him down and explained why it was so
important to allow his body to heal and become balanced again-to avoid worse problems when he gets older. We told him he is young now and can heal faster than when he is older. Remembering his discomfort and yearning for it to go away for good, our son made his own decision to say goodbye to grains.
It has been a month and a half now and our son is so happy to be free of his intestinal discomfort. He enjoys his lettuce wrapped sandwiches and hamburgers, eating burrito bowls instead of burritos or tacos wrapped in corn tortillas, the many different ways to prepare eggs instead of eating cereal. We juice a lot and he is finding more and more vegetables that he likes. Who knows, maybe he can go back to an occasional gluten free grain dish once he heals his belly.
And from this new journey we have embarked upon, look for more grain free and raw recipes. I will need to come up with some tasty desserts for him to enjoy too.

So let’s go one step further, ICE CREAM!!! My kids and I have seen demonstrations of ice cream made with just bananas and ice and after the demonstration they turn the container upside down to show how thick the ice cream is. Every time I see this of course my kids beg me to buy one. Glancing at the price tag (over $500) I say no not this time. In my mind I am saying “yah that will be the day”. I can’t tell you how thrilled my kids were when I brought home the Cleanblend Blender! The first thing we made was the Healthy Banana Ice Cream we saw demonstrated so many times. Did it blend? YES! Raw cultured vegetables are made by leaving veggies out on the counter @ about 70 deg. F for 3 days to a week. The good bacteria begin feeding on the vegetables and causes fermentation. This fermentation becomes the “super food” our bodies need to function optimally.
You can buy cultured vegetables at the store but keep in mind most of them are usually pasteurized, which defeats the purpose of eating them because the enzymes are destroyed and they are packed with preservatives. YUCK!
If you are not use to eating cultured vegetables it takes just a little while to get use to them. They have a slight tangy flavor which my taste buds have become accustomed to. I make sure I eat 2 tablespoons with each meal. There are creative ways to get them into you though. Add to salads, use the juice as a salad dressing, scoop with gluten free tortilla chips. Or you can just eat them like I do; I like to add a splash of apple cider vinegar and a sprinkle of sea salt and ground pepper.
But don’t just stick with the basic cabbage, carrot, ginger, and garlic. Experiment with other veggies like kale, collards, celery, green apple, even ocean vegetables. Don’t be afraid of using herbs either.

You make a beautiful crispy coleslaw ahead of time, you place it in the refrigerator. When you get to the potluck you are horrified that your coleslaw dressing is watery! You wonder where this water came from? Good news! You can easily avoid this nightmare.
A head of cabbage is 93% water. This high water content helps keep it crisp and crunchy. But it also makes for a watery dressing when making coleslaw. The reason for this is because the pectin in the cell walls of the cabbage hold onto the water. But when you add dressing to the coleslaw, the salt in the dressing slowly draws out the water by breaking down the pectin in the cell walls.

What you want to do is get rid of the water before it releases into the prepared coleslaw. To do this you add salt to the shredded cabbage, toss it in a colander and place it over the bowl and allow to sit for 1 to 4 hours. The salt will slowly draw out the water. Once drained thoroughly, rinse the salt off of the cabbage in the colander, allow to drain and add to a bowl. Follow the recipe for

Our society is being overridden by disease and obesity:

Doesn’t it make you wonder that something has to be the underlying cause to all of these diseases and conditions? Consider for a moment the foods we consume, most overloaded with gluten products and dead food, food lacking the nutritious elements our bodies need to function. Is it possible to consider that gluten and lack of nutrition could be the underlying cause? Let’s look at the science behind how gluten reacts in our bodies.
A common belief is that consuming refined foods plays a major role in the sickness of our society. The reason for this is most vitamins, minerals, and enzymes are removed during the refining process of carbohydrates. These elements make foods more digestible by breaking them down into the nutrients needed to nourish the body. If the food we eat lack these vital elements our bodies need to function, then the body has to use it’s own vitamin, mineral, and enzyme stores to digest refined carbohydrates. This starves the body causing sickness and disease. When the food our body is unable to break down passes into the blood stream where it is targeted as an allergen, it wreaks havoc on our bodies in the form of leaky gut, allergic responses like skin rashes, mental disorders, etc.
Sure our ancestors ate grains but they were in their whole, unrefined state. They still contained these vitamins, minerals, and enzymes that processing takes out. These carbohydrates were also eaten in moderation not daily with every meal. The hardest proteins for humans to digest are gluten, wheat, corn, oats, rye, and barley, all which our foods are saturated in. All of these grains have become a staple in our diets today and no longer the ancient grains our ancestors consumed, they have been modified.
Because of processing and modification of foods, today’s whole grains have enzyme inhibitors which causes digestion problems and leaky gut. Wheat germ agglutinin causes leaky gut. It eats away at the stomach lining, allowing wheat, beneficial and non beneficial bacteria and other molecules to enter places they do not belong like the blood stream. The bacteria produces byproducts in other areas that also contribute to the degradation of the stomach lining. Also, phytic acid from whole grains block absorption of iron, copper, zinc, magnesium, and calcium by combining with them. Starving our bodies of the vitamins they need, not only that but GMO grains contain toxic foreign proteins, which cause mutations.
Gluten in particular is a protein from grains that binds food, therefore our bodies cannot extract the nutrients out. Gluten is sticky in your stomach and slows down digestion. It contains lectins that irritate the gut and phytates that bind minerals. Eating a slice of organic whole wheat bread, for example, with your all organic salad that is full of vitamins and minerals essentially renders it useless to the body. The nutrients you are trying to feed your body with are being bound by the gluten, making it virtually impossible for your body to extract the nutrients.
Many people are also allergic to gluten, their bodies produce an antibody against gluten causing inflammation in the gut or leaky gut syndrome. It is not an easy task to wean yourself off of gluten. With it’s highly addictive properties, from opioid peptides, a drug found in addictive drugs like morphine, pulling yourself off of gluten can have side effects similar to that of a drug addict. I hear so many times people saying they would love to get off of gluten but they just physically and mentally cannot.
